※About Mikumano Beef：
Mikumano Beef is a rare variety of Wagyu raised at the "Okada Farm" in the lush, natural environment of Kumano. It is a premium Japanese Black (Kuroge Washu) breed, exclusively selecting virgin heifers (female cows that have not calved), known for their exceptional marbling and delicate flavor.

【レストラン紹介】日本初！全国でも類稀な「竹の谷蔓牛」と言う黒毛和種の原種となる純血系牛を取り扱っており、日本人でも殆どの方が食べた事の無い、日本在来の牛を食べる事が出来ます。脂身は少なく濃厚な味わいで、赤身好きの方にも自信をもってお勧めします。江戸時代から守られてきたこの味を是非ご賞味ください。
【竹の谷蔓牛とは】江戸時代から他の交配を一切せずに守られてきた、日本在来かつ最古の黒毛和牛「竹の谷蔓牛」。約 40 年以上前から、未来の国産牛を危惧した平田五美さんと言う牛飼いが、人生を懸けて守って来ました。交配種の現代黒毛和牛とは違い、出荷までにかかる時間が 2 倍近くかかります。年間 4 ~ 7 頭のみ出荷されますが、本当の黒毛和牛は「口之島牛」「見島牛」「竹の谷蔓牛」の三種類だけとなってしまいました。
